Tandoori Pasta is a delicious fusion dish that combines the bold, smoky flavors of Indian tandoori spices with the comforting appeal of Italian pasta. Rich, creamy, and packed with aromatic seasonings, this recipe offers a unique twist on traditional pasta, making it a favourite among those who enjoy experimenting with global flavors.

The creamy tandoori sauce, colourful vegetables, and perfectly cooked pasta create a satisfying meal that is ideal for lunch, dinner, or special gatherings with family and friends.

Ingredients:

  • Main Ingredients
  • Pasta (Penne or Macaroni) – 1 cup
  • Oil – 1 tbsp
  • Onion – ½ (sliced)
  • Capsicum – ½ (sliced)
  • Tomato – 1 (chopped or pureed)
  • Fresh Cream or Malai – 1 tbsp
  • For the Tandoori Masala Mix
  • Curd – 2 tbsp
  • Red Chilli Powder – ½ tsp
  • Turmeric Powder – ¼ tsp
  • Garam Masala – ¼ tsp
  • Cumin Powder – ¼ tsp
  • Ginger-Garlic Paste – ½ tsp
  • Lemon Juice – from ¼ lemon
  • Salt – to taste

Instructions:

Boil the Pasta (2–3 Servings)

Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.

Prepare the Tandoori Masala Mix

In a bowl, combine curd, red chilli powder, turmeric powder, garam masala, cumin powder, ginger-garlic paste, lemon juice, and salt. Mix well to form a smooth tandoori marinade.

Prepare the Tandoori Sauce

Heat oil in a pan over medium heat. Add the sliced onions and capsicum and sauté for 2–3 minutes until slightly softened.

Add the chopped tomato or tomato puree and cook until the mixture thickens and the oil begins to separate.

Add the prepared tandoori masala mixture and cook for 2–3 minutes, stirring continuously until the raw flavor of the curd disappears and the masala becomes aromatic.

Finish the Pasta

Add the cooked pasta to the pan and toss gently until every piece is coated with the tandoori sauce.

Stir in fresh cream or malai and cook for another minute. Adjust seasoning if required and serve hot.

Tips & Variations

Extra Smoky Flavor: Add a pinch of smoked paprika or use the charcoal smoking method for restaurant-style taste.

Protein Boost: Add paneer cubes, grilled tofu, or tandoori chicken pieces.

Creamier Texture: Increase the quantity of fresh cream or add grated cheese.

Spicier Version: Add extra red chilli powder or finely chopped green chillies.

Serve With: Garlic bread, grilled vegetables, fresh salad, or a chilled yoghurt dip
