Ingredients:
Fresh Palak (Spinach) – 2 bunches
Paneer – 200 g (cubed)
Onion – 1 medium (chopped)
Tomato – 1 medium (chopped
Green Chilli – 1 (optional)
Garlic – 5–6 cloves
Ginger – 1-inch piece
Cumin Seeds – 1 tsp
Turmeric Powder – ½ tsp
Red Chilli Powder – ½ tsp
Garam Masala – ½ tsp
Fresh Cream – 2 tbsp (optional)
Oil, Butter, or Ghee – 2 tbsp
Salt – to taste
Instructions:

Prepare the Spinach Base (3–4 Servings)
Wash the spinach thoroughly and blanch it in hot water for 2–3 minutes until wilted. Immediately transfer the spinach to a bowl of cold water to preserve its bright green color.
Drain the spinach and blend it with ginger, garlic, and green chilli into a smooth puree. Set aside.

Prepare the Sauce
Heat 1 tablespoon of oil in a wok or frying pan. Add chopped garlic, ginger, green chillies, and spring onion whites. Sauté for about a minute until fragrant.
Add cubed onions and cook until slightly translucent. Stir in soy sauce, red chilli sauce, tomato ketchup, vinegar, salt, and black pepper. Mix well and cook for another minute.

Finish the Curry
Add the prepared spinach puree to the pan and cook on a low flame for 3–4 minutes, allowing the flavors to combine.
Gently add the paneer cubes and mix carefully so they remain intact. Sprinkle in the garam masala and stir well. Add fresh cream for a richer texture and simmer for another 2 minutes.
Serve hot with naan, roti, paratha, or jeera rice.
